I'm wondering, how often do you need to update an blog or any site for that matter to give the impression to surfers (or anyone) that a site is alive and fresh?

Say personally, what do you think if you see a blog that updates once per day, or twice..?

I often get stressed out thinking that I have to make sure to add a few new reviews each week to gaydemon, 20+ blogs, stories and 100s of sites. But maybe one could do much less and still seem just as fresh and alive?

It depends a lot on what you are updating. If you are going after bookmarkers, you could update a fetish blog once every two days. If you have a general blog, then you would need to update 2-3 times a day.

I wouldn't stress about the frequency of reviews.

Sites are the least expensive part of running gaydemon (I would assume) and surfers most probably come back and check them more than anything else.

My guess is that it depends on the surfers you attract and hope to keep happy.
I agree that review sites do not need to update as regular as a blog. Some blogs need to update more than others depending on the style and content.

Is there a way to look at the frequency of return visitors?
If they are visiting 2-3 times a day or only once every three to four days... Personally, I only visit gaydemon.com about 1-2 times aweek because I like to read the new/updated reviews and check out the new galleries. (And there is more on the site I'm sure, just not enough time to see it all)
